Japanese Fermentation Classes

  • Koji Basics

    Learn the fundamentals of Koji making while engaging in mindful fermentation practices. Koji history, health benefits, use cases, and more are covered. You will make and take two Koji marinades home with you.

  • Miso Making

    Discuss and taste all the different varieties of miso popular in Japanese cooking. We will prepare 1.5 lbs of miso to take home with you.

  • Amazake Brewing

    You will learn multiple methods of fermenting Amazake (sweet fermented rice milk) using various grains and flavors. Take home your own probiotic Amazake along with signature Rice Flower recipes.
